Nick Alvis

Nick began his career cooking in several UK country house hotels before moving into the world of London’s Michelin starred restaurants. In 2008 he relocated to Paris for an 18-month tenure and then on to the Middle East where he has lived since 2010.

In 2011 he went into partnership with Scott Price launching their own Dubai-based F&B consultancy and has since opened multiple homegrown restaurants across the city. Their debut concept, table 9 by Nick & Scott opened the same year, with folly by Nick & Scott being the most recent addition to their portfolio.

Over the last decade he has won a string of awards and accolades, including The Worlds 50 Best Discovery – a list internationally recognised as crediting the globes most reputable restaurants.

Alvis now solely manages his consultancy and continues to push boundaries within the local culinary sphere and remains committed to developing local talent and developing new, creative concepts to elevate Dubai’s position as one of the world’s best cities for gastronomy.

Joban George

Restaurant Manager

George joined the team in early 2018 and his classic, gentlemanly, service style is unwavering. Forever solving problems and keeping folly polished and refined, George is the true backbone to our service and overall guest experience.

Ganesh Khatri

Ganesh joined folly in 2018 and has worked his way to the top with his endless energy and dedication. A true hospitality professional, he always puts guests first but thrives most when delivering menu pairings and is constantly studying his newfound love of everything grape.

Hamouda Torman

Head Chef

With a culinary career spanning 14 years, Torman Hamouda started out as Chef De Partie, before joining Gates Hospitality as Junior Sous Chef at Oman’s Six Senses Zighy Bay. In 2017 he joined the folly team as Sous Chef where he trained alongside Nick & Scott for 3 years before he was promoted into his first head chef role at Verve Bar & Brasserie in 2018. He then re-joined the folly team in 2021.

Tony Githaiga

Arriving in Dubai in 2013, Tony joined the table 9 kitchen team and has stayed part of Nick’s brigade since. In 2017 he joined folly’s opening team as Chef De Partie and has since worked tirelessly to become Sous Chef. Tony is key to the ensuring delivery and consistency with a clear understanding of folly’s menu creation and kitchen management.
